Homemade Egg Nog

Ingredients
  • 2 cups sugar
  • ½ gal. milk
  • 24 ounces canned evaporated milk.
  • 1 tsp cornstarch
  • 4 eggs, separated
  • ½ tsp nutmeg
  • 1 Tbsp sugar
  • 1 Tbsp vanilla, optional
  • Cinnamon sticks or peppermint sticks for stirring, optional
Instructions
  1. Sprinkle additional nutmeg or cinnamon for topping Separate eggs, set aside whites.
  2. Mix together egg yolks, add 1 tsp milk and 2 cups sugar, mix well.
  3. In large pot pour ½ gallon milk only. Bring to a boil, stirring constantly.
  4. Add the egg yolk mixture, nutmeg, cornstarch, canned milk and bring to a boil.
  5. Remove from heat.
  6. Add vanilla if using. Whip egg whites and extra sugar until stiff.
  7. Spoon egg whites into egg nog. Serve with cinnamon or peppermint sticks for stirring.

 

Vegan Eggnog

Ingredients
  • 21 oz extra-firm silken tofu
  • 2 cups soymilk
  • ⅔ cup turbinado sugar, light brown sugar, or sucanat (or use ½ sup honey or 1 cup alternate liquid sweetener)
  • ¼ tsp salt
  • 1 cup cold water
  • 1 cup rum or brandy
  • 4½ tsp vanilla extract
  • 20 ice cubes
  • nutmeg
Instructions
  1. Place the crumbled tofu and soy milk in a blender with the sugar and salt.
  2. Blend until very smooth.
  3. Scrape this into a large bowl or pitcher, and whisk in the water, rum or brandy, and vanilla.
  4. Mix well, cover, and refrigerate until serving time.
  5. To serve, blend half of the mixture in the blender with 10 of the ice cubes until frothy.
  6. Repeat with the other half.
  7. Serve in glasses with nutmeg sprinkled on top.

 

Diet Eggnog

Ingredients
  • 6 cups of skim milk
  • 1 cup of Egg Beaters (or your favorite comparable product)
  • Sweetener to taste (Use the pink stuff, the blue stuff, the yellow stuff AND if you use the real stuff, be sure and measure carefully and remember to count those added calories! Real sugar will blow up anyone except ants when used in high quantities!)
  • 2 teaspoons of real vanilla extract (Rub a little behind your ears and live a little!)
  • 2 teaspoons of rum extract
  • Ground nutmeg and cinnamon (or you can use a bit of pumpkin pie spice)
Instructions
  1. Heat the milk, Egg Beaters and sweetener in the microwave on high until thickened, stirring every minute or so. You can also use your stove if you prefer. Remove from microwave or stove top and stir in the remaining ingredients. Next, cover the mixture very tightly with plastic wrap and chill. Sprinkle with additional nutmeg and cinnamon if desired. You can even add a dollop of nonfat, sugar free topping for an added treat!
Notes
This recipe for Holiday Egg Nog makes about six to eight ounce servings for about 100 calories each. Be sure and leave some out for Santa along with your plate of holiday low fat cookies. As he’ll be making lots of stops on Christmas Eve, he’ll appreciate this light, non-fattening treat! Who knows, he may even leave some very special in your stocking!

Ingredients
  • 6 lg egg; beaten
  • 2 c Milk
  • ⅓ c Sugar
  • 4 tb light rum
  • 4 tb bourbon
  • 1 tsp vanilla
  • 1 c whipping cream
  • 2 tb Sugar
  • 1 ground nutmeg
Instructions
  1. In a large heavy saucepan mix eggs, milk, and ⅓ cup sugar. Cook and stir over medium heat till mixture coats a metal spoon. Remove from heat.
  2. Cool quickly by placing pan in a sink or bowl of ice water and stirring 1-2 minutes. Stir in run, bourbon, and vanilla. Chill 4-24 hours.
  3. At serving time, in a bowl whip cream and 2 tablespoons sugar till soft peaks from. transfer chilled egg mixture to a punch bowl. Fold in whipped cream mixture. Serve at once. Sprinkle each serving with nutmeg.
