Ingredients

  • 2 cups sugar
  • 1/2 gal. milk
  • 24 ounces canned evaporated milk.
  • 1 tsp cornstarch
  • 4 eggs separated
  • 1/2 tsp nutmeg
  • 1 Tbsp sugar
  • 1 Tbsp vanilla optional
  • Cinnamon sticks or peppermint sticks for stirring optional

Instructions

  • Sprinkle additional nutmeg or cinnamon for topping Separate eggs, set aside whites.
  • Mix together egg yolks, add 1 tsp milk and 2 cups sugar, mix well.
  • In large pot pour 1/2 gallon milk only. Bring to a boil, stirring constantly.
  • Add the egg yolk mixture, nutmeg, cornstarch, canned milk and bring to a boil.
  • Remove from heat.
  • Add vanilla if using. Whip egg whites and extra sugar until stiff.
  • Spoon egg whites into egg nog. Serve with cinnamon or peppermint sticks for stirring.

Ingredients

  • 21 oz extra-firm silken tofu
  • 2 cups soymilk
  • 2/3 cup turbinado sugar light brown sugar, or sucanat (or use ½ sup honey or 1 cup alternate liquid sweetener)
  • 1/4 tsp salt
  • 1 cup cold water
  • 1 cup rum or brandy
  • 4 1/2 tsp vanilla extract
  • 20 ice cubes
  • nutmeg

Instructions

  • Place the crumbled tofu and soy milk in a blender with the sugar and salt.
  • Blend until very smooth.
  • Scrape this into a large bowl or pitcher, and whisk in the water, rum or brandy, and vanilla.
  • Mix well, cover, and refrigerate until serving time.
  • To serve, blend half of the mixture in the blender with 10 of the ice cubes until frothy.
  • Repeat with the other half.
  • Serve in glasses with nutmeg sprinkled on top.

Ingredients

  • 6 cups of skim milk
  • 1 cup of Egg Beaters or your favorite comparable product
  • Sweetener to taste Use the pink stuff, the blue stuff, the yellow stuff AND if you use the real stuff, be sure and measure carefully and remember to count those added calories! Real sugar will blow up anyone except ants when used in high quantities!
  • 2 teaspoons of real vanilla extract Rub a little behind your ears and live a little!
  • 2 teaspoons of rum extract
  • Ground nutmeg and cinnamon or you can use a bit of pumpkin pie spice

Instructions

  • Heat the milk, Egg Beaters and sweetener in the microwave on high until thickened, stirring every minute or so. You can also use your stove if you prefer. Remove from microwave or stove top and stir in the remaining ingredients. Next, cover the mixture very tightly with plastic wrap and chill. Sprinkle with additional nutmeg and cinnamon if desired. You can even add a dollop of nonfat, sugar free topping for an added treat!

Notes

This recipe for Holiday Egg Nog makes about six to eight ounce servings for about 100 calories each. Be sure and leave some out for Santa along with your plate of holiday low fat cookies. As he’ll be making lots of stops on Christmas Eve, he’ll appreciate this light, non-fattening treat! Who knows, he may even leave some very special in your stocking!

  • 6 lg egg; beaten
  • 2 c Milk
  • 1/3 c Sugar
  • 4 tb light rum
  • 4 tb bourbon
  • 1 tsp vanilla
  • 1 c whipping cream
  • 2 tb Sugar
  • 1 ground nutmeg

Instructions

  • In a large heavy saucepan mix eggs, milk, and 1/3 cup sugar. Cook and stir over medium heat till mixture coats a metal spoon. Remove from heat.
  • Cool quickly by placing pan in a sink or bowl of ice water and stirring 1-2 minutes. Stir in run, bourbon, and vanilla. Chill 4-24 hours.
  • At serving time, in a bowl whip cream and 2 tablespoons sugar till soft peaks from. transfer chilled egg mixture to a punch bowl. Fold in whipped cream mixture. Serve at once. Sprinkle each serving with nutmeg.

  • 12 egg yolks
  • 1 lb. confectioner’s sugar
  • 2 c. dark rum brandy, bourbon, or rye
  • 2 to 4 cups of liquor
  • 2 quarts whipping cream
  • 1 cup peach brandy if desired
  • 8 to 12 egg whites

  • Step One Preparation
  • Beat separately until light in color. 12 egg yolks Beat in gradually. 1 lb. confectioner’s sugar Add very slowly, beating constantly. 2 c. dark rum, brandy, bourbon, or rye. Let mixture stand covered for 1 hour to dispel the “eggy” taste.
  • Step Two Preparation
  • Add, beating constantly, 2 to 4 cups of liquor 2 quarts whipping cream 1 cup peach brandy, if desired Refrigerate covered for 3 hours. Beat until stiff but not dry 8 to 12 egg whites Fold egg whites lightly into the other ingredients. Serve sprinkled with fresh nutmeg and cinnamon to taste.

  • 1 1/2 oz. 3 tbsp. 80-proof vodka
  • 2 tsp. Coffee-mate Sugar Free French Vanilla powdered creamer
  • 1 no-calorie sweetener packet like Splenda
  • 1/4 tsp. peppermint extract
  • Optional Garnish: 1 small candy cane

Instructions

  • Place powdered creamer and sweetener in a glass.
  • Add 1/4 cup warm water and stir to dissolve.
  • Fill a cocktail shaker halfway with ice cubes.
  • Add creamer mixture, vodka, and peppermint extract.
  • Cover and shake well, until mixture is cold. Strain into a martini glass.
  • If you like, garnish with a candy cane leaning jauntily on the rim.

 

No Egg-Nog

Ingredients

  • 1 pkg. instant vanilla pudding
  • 1 1/2 quarts milk
  • 2 1/2 tsp rum extract
  • 1/2 tsp nutmeg

Instructions

  • Blend pudding mix and 2 cups of milk, following directions on pudding package. Chill for 5 minutes. Add the rum and nutmeg, then mix in the rest of the milk. Chill and serve.

Notes

If you don't want to use eggs in your eggnog, pudding mix will do the trick. It's not as rich as traditional eggnog, but is quicker to make and noticeably sweeter.
