Ingredients

  • 6 qt. popped corn
  • 1 C. sugar
  • 1 C. white corn syrup
  • 1 pkg. gelatin any flavor

Instructions

  • Combine syrup and sugar and gelatin while stirring.
  • Bring mixture to a boil and pour over popped corn.
  • Shape into balls.

 

Chocolate Cherry Fudge

Ingredients

  • 12 ounce package semisweet chocolate chips
  • 1/4 cup light corn syrup
  • 1/2 cup powdered sugar
  • 1/4 cup evaporated milk
  • 1 teaspoon real vanilla extract
  • 6 ounces dried cherries
  • 1/3 cup chopped pecans

Instructions

  • Line a 9 inch square pan with foil and butter or coat with cooking spray.
  • In a heavy saucepan, combine chocolate chips and corn syrup.
  • Cook and stir on low heat until melted.
  • Remove from the heat, stir in powdered sugar, evaporated milk and vanilla.
  • Beat with a wooden spoon for about 5 minutes until thickened and glossy.
  • Stir in cherries and pecans.
  • Spread in prepared pan. Refrigerate until firm.
  • Lift fudge out of pan with foil and discard foil.
  • Cut fudge into 1 inch squares with knife or pizza cutter.
  • Store in airtight container in refrigerator.

 

Soft Gingerbread Cookies

Ingredients

  • 3/4 cup molasses
  • 1/3 cup packed brown sugar
  • 1/3 cup water
  • 1/8 cup butter softened
  • 3 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground allspice
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon

Instructions

  • In a medium bowl, mix together the molasses, brown sugar, water and butter until smooth. Combine the flour, baking soda, allspice, ginger, cloves and cinnamon, stir them into the wet mixture until all of the dry is absorbed.
  • Cover the dough and chill for at least 3 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • On a lightly floured surface, roll the dough out to 1/4 inch thickness.
  • Cut out into desired shapes. Place cookies 1 inch apart onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven.
  • Remove from the cookie sheets to cool on wire racks.

Ingredients

  • 2 cups butter softened (no substitutes)
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups sugar
  • 1 1/2 cups brown sugar
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 5 cups flour
  • 2 cups chocolate chips
  • 3 cups chopped macadamia nuts

Instructions

  • Preheat oven to 375.
  • In large bowl, cream together butter, sugar and brown sugar.
  • Beat in eggs and vanilla.. Stir in salt, baking powder and baking soda.
  • Mix in flour. Stir in chocolate chips and nuts.
  • Shape into 1 inch balls and place on ungreased baking sheet, 2 inches apart.
  • Bake for 9-11 minutes.
  • I leave mine just a little soft set, just starting to turn golden on the bottom. You can roll into larger balls, for larger cookies. Adjust the baking time accordingly.

 

Eggless Coffee Crisps

Ingredients

  • 2-1/2 cups of flour
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 1 cup softened butter
  • 1/2 cup packed light brown sugar
  • 2 teaspoons instant coffee granules dissolved in 2 teaspoons hot water

Instructions

  • Mix flour, cinnamon & salt in a separate bowl, beat butter and brown sugar until light and fluffy.
  • Beat in the dissolved coffee.
  • With the mixer on low speed gradually mix in flour mixture until blended.
  • On wax paper shape dough into 2 blocks about 8" long by 1-1/2 inches square.
  • Wrap and chill for at least 4 hours until firm enough to slice.
  • Heat oven to 350 degrees.
  • Slice dough into 1/2" slices and place on ungreased cookie sheets 1 inch apart.
  • Bake 12 to 14 minutes until light golden brown and firm.
  • Remove to racks to cool.
  • Glaze
  • teaspoons instant Coffee granules dissolved into 4 teaspoons hot water
  • cup confectionery sugar
  • Mix until smooth and drizzle over cookies.

Notes

If you can get chocolate covered coffee beans, place one in the center of each cookie, using a drop of glaze as glue.
*Chocolate coffee beans can be expensive and after much searching last year the beans that I did find (at the mall) looked a little old to me. So as an alternative I used those new premium M&M's in mocha flavor. They worked out nicely.

  • 1 C. Shortening
  • 4 eggs
  • 2 tsp. Baking soda
  • 2 C. apple-sauce
  • 2 C. sugar
  • 4 C. flour
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. cloves
  • 1 tsp. salt

Instructions

  • Mix applesauce and baking soda in bowl.
  • Cream shortening and sugar together in a bowl and add eggs.
  • Sift flour and spices into mixture and add applesauce.
  • Bake for 12 minutes at 350.

 

Gingerbread Men Cookies

Ingredients

  • 3 cups flour
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 3/4 cup butter softened
  • 3/4 cup brown sugar
  • 1/2 cup molasses
  • 1 egg
  • 1 1/2 tsp vanilla

Instructions

  • In bowl mix flour, ginger, cinnamon, baking soda, nutmeg and salt. In an electric mixer combine butter and brown sugar on medium speed until fluffy. Add molasses, egg and vanilla; mix well. Slowly add in flour mixture on low speed until well mixed. Wrap dough in plastic wrap. Refrigerate overnight.
  • The next day: Preheat oven to 350 degrees. Roll dough to a 1/4 inch thickness on a floured work surface. Cut into gingerbread men shapes with cookie cutter. Place about a finger tip apart on ungreased baking sheets. Bake 9 to 12 minutes or until edges of cookies are set and just begin to brown. Cool on baking sheets 2 minutes. Remove to wire racks; cool completely. Decorate cooled cookies.

Notes

I use the white, green, & red icing from Betty Crocker just because it is so convenient but you can make your own too. Refrigerate dough overnight.

Ingredients

  • 8 oz. Vanilla wafers crushed
  • 1 C. powdered sugar
  • 1 Stick of margarine
  • 2 eggs
  • 1 can Blueberry filling
  • 1 C. whipping cream
  • C. nuts optional

Instructions

  • Spread ½ of the vanilla wafers in the bottom of a 9x9 pan.
  • Cream together sugar, butter and eggs and spread over the crumbs.
  • Layer can of blueberry filling over creamed mixture and top with remaining vanilla wafer crumbs and nuts if desired.
  • Refrigerate for 24 hours before serving.
