Ingredients

  • Core and slice 4 fresh pears
  • Mix 1/2 cup butter
  • 1 cup flour
  • nutmeg

Instructions

  • Mix butter and flour together and spread over pears in a shallow casserole dish. Sprinkle with nutmeg and bake at 350 degrees for 25 minutes.

Ingredients

  • 1 can of Sweetened Condensed Milk
  • 1 box of Ritz Crackers
  • 1 package of your choice:
  • peanut butter chips
  • chocolate chips
  • toffee bits

Instructions

  • Pour the crackers into a large Ziploc bag. Finely crush with a rolling pin. Pour the crumbs into a large bowl. Pour the entire can of condensed milk into the bowl. Pour the entire package of chocolate chips (or your choice). Mix all ingredients until well blended. Pour the mixture into a greased 8x8 square cake pan. Bake at 350' for 15 minutes. Cool and place in the fridge. Cut into bite sized squares as it is very sweet.

Notes

Have cold milk ready to offer when serving. This recipe is so simple and I have never had a guest who didn't love it! This will actually be my first Christmas using it as I just discovered it this year. Toffee Bits are a favorite in this recipe. You can also use the low salt Ritz crackers.

 

Whisky Eggnog

Ingredients

  • 4 eggs
  • 1/2 cup sugar
  • 3 cups milk
  • 1 teaspoon vanilla extract
  • 1/2 cup whisky
  • 1/2 teaspoon freshly grated nutmeg
  • 1 cup heavy cream

Instructions

  • In a saucepan, beat the eggs and sugar until creamy. In a second saucepan over low heat, heat 2 cups of the milk until hot. Slowly add to the egg mixture, stirring continuously. Cook over low heat, stirring, for 15 to 20 minutes or until the mixture reaches 170°F and has thickened. Stir in the remaining milk, vanilla, whisky, and half the nutmeg. Chill 3 hours.
  • In a medium bowl, beat the cream until soft peaks form. Fold into the milk mixture. Ladle the eggnog into a punch bowl and sprinkle with the remaining grated nutmeg.

Notes

This traditional holiday drink is saved from raw-egg problems by cooking the custard. Brandy or rum can be substituted for whisky.

 

Mini Pumpkin Cheesecakes

Ingredients

  • Crust :
  • 1 tsp finely diced candied ginger or real ginger
  • 2 tbsp melted butter
  • 1 cup cookie crumbs
  • 2 tbsp of any combination of the following spices:
  • cinnamon nutmeg, ginger, allspice
  • a pinch of pepper not a type-o
  • 2 tbsp sugar
  • Filling:
  • 8 oz room temperature cream cheese
  • 2 eggs
  • 2/3 cup of pumpkin. you can go up to 3/4 of a cup if you like your pumpkin more intense it makes the cakes a little denser
  • 1 tsp vanilla
  • 2 tbsp of the following spices all together:
  • cinnamon nutmeg, allspice, ginger. (omit some, add others, or just use pumpkin pie spice)
  • 1/2 cup of light brown sugar

Instructions

  • Crust Directions:
  • Preheat oven to 325 degrees (F) Line a muffin tin with paper liners. Mix everything together. Press about a tablespoon of the mixture into the tin. Bake the crusts for about 8-10 minutes. Let cool while preparing the filling. Lower the oven temperature to 300 degrees.
  • Filling:
  • Cream the cream cheese and sugar together. Add in one egg at a time, waiting until each egg is fully incorporated. Add in vanilla Then add in the pumpkin and the spices. Spoon about 2 tbsp of the mixture onto each crust. Bake for 25-30 minutes. Let cool, then chill in the fridge about 4 few hours.

Notes

Sometimes if I want to speed up the process I use Vanilla Wafers, or another plain type cookie I have used all different kinds and then all you do is make the filling. You place the cookie at the bottom of the liner and pour filling over that. Also, I like to use the "foil" type liners they work better. My friend said on the spices if you don't have them all don't worry add what you do have, or if you do not like the flavor of one or if you like to use the readymade pumpkin pie spice use that. Also we would top these with a little homemade whip cream but you can use the store bought kind too. This is an all time favorite at parties, I got this recipe from a co-worker/friend several years ago. She said they have had this for as long as she could remember.

  • Crust
  • 1 ½ C. flour
  • 1 ½ tsp. sugar
  • 1 tsp. salt ½ C. salad oil
  • 2 tbs. cold milk
  • Filling
  • 4 C. sliced apples
  • C. sugar
  • 2 tbs. flour
  • tbs. nutmeg
  • tsp cinnamon
  • Topping
  • C. flour
  • C. sugar
  • C. margarine or butter

Instructions

  • Crust: Combine flour, sugar, salt, salad oil and milk. Mix until well blended. Pat in bottom and sides of 9-inch pie pan. Do not roll it out!
  • Filling: Combine sugar, flour, and spices. Toss lightly with apples and pour into unbaked pie shell.
  • Topping: Combine and mix together until crumbly. Sprinkle over top of pie.
  • Place pie in paper bag and seal. Bake at 350 degrees for 1 hour 45 minutes. NO PEEKING!

  • 2 and 2/3 cup of sifted flour
  • 2 tsp cream of tartar
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter or margarine
  • 1 and 1/2 cup of sugar
  • 2 eggs
  • 2 T ground cinnamon
  • 3 T sugar
  • halved pecans or walnuts optional

  • Sift together flour, cream of tartar, baking soda, and salt -- set aside. 2. Cream butter and sugar. Add eggs one at a time; beat well after adding each. 3. Add dry ingredients. Refrigerate 1 hour. 4. Drop by teaspoonfuls onto lightly greased cookie sheet. 5. Press half a nut into center -- sprinkle with cinnamon and sugar mixture. 5. Bake at 350' for 12-15 minutes

  • 1 cup unsalted butter softened
  • 1 2/3 cups powdered sugar divided
  • 1 teaspoon vanilla
  • 2 cups flour
  • 6 tablespoons unsweetened dark coco powder divided
  • 1 tablespoon cinnamon divided
  • 1/8 teaspoon salt
  • 2/3 cup toasted almond finely chopped (or walnuts)

Instructions

  • Preheat oven to 325 degrees. 2. In a large mixing bowl, beat together butter and 2/3 cup powdered sugar with electric mixer on medium speed until well combined. Beat in vanilla. 3. In a separate small mixing bowl, mix together flour, 1/4 cup cocoa powder, 2 teaspoons cinnamon, and salt until well combined. Beat into butter/sugar mixture. Stir in almonds (or the nut you like) and chocolate until well combined and dough forms. 4. In a large shallow bowl, whisk together remaining 1 cup of powdered sugar, 2 tablespoons cocoa powder, and 1 teaspoon cinnamon until combined. Set aside. 5. Form dough into 1 tablespoon balls. Place cookies on ungreased cookie sheets (or parchment paper). Bake cookies at 325 degrees for about 15-20 minutes or until lightly browned on the bottom being careful not to over-bake. Cookies will harden as they cool. Cool cookies about 1-2 minutes then roll in sugar mixture while still warm. Same as regular they should be a little warm so as the sugar clings to them.

 

Candied Orange Peel

Ingredients

  • 1 Orange
  • 1/2 C. Sugar
  • Water

Instructions

  • Cut orange skin in quarters, cover with cold water, bring to boiling point and cook until soft. Drain, remove white portion and cut the rest into thin strips. Boil 1/2 cup sugar until syrup threads when dropped from tip of spoon. Cook strips in syrup 5 minutes, drain and coat with powdered or granulated sugar.
