Cornbread Muffins

Ingredients

  • 1 c. flour sifted
  • 2 tsp. baking powder
  • 2 tbsp. sugar
  • 3/4 tsp. salt
  • 1/3 c. vegetable oil
  • 1 egg beaten
  • 3/4 c. milk
  • 2/3 c. yellow corn meal

Instructions

  • Combine all dry ingredients and mix together. Next, add in wet ingredients and mix until combined. Do not overwork the mixture. Spoon mixture into muffin cups until 2/3 full. Bake at 400 for 20-25 minutes.
