Cornbread Muffins
Ingredients
- 1 c. flour sifted
- 2 tsp. baking powder
- 2 tbsp. sugar
- 3/4 tsp. salt
- 1/3 c. vegetable oil
- 1 egg beaten
- 3/4 c. milk
- 2/3 c. yellow corn meal
Instructions
- Combine all dry ingredients and mix together. Next, add in wet ingredients and mix until combined. Do not overwork the mixture. Spoon mixture into muffin cups until 2/3 full. Bake at 400 for 20-25 minutes.
