Cooked Eggnog

Ingredients

  • 6 lg egg; beaten
  • 2 c Milk
  • 1/3 c Sugar
  • 4 tb light rum
  • 4 tb bourbon
  • 1 tsp vanilla
  • 1 c whipping cream
  • 2 tb Sugar
  • 1 ground nutmeg

Instructions

  • In a large heavy saucepan mix eggs, milk, and 1/3 cup sugar. Cook and stir over medium heat till mixture coats a metal spoon. Remove from heat.
  • Cool quickly by placing pan in a sink or bowl of ice water and stirring 1-2 minutes. Stir in run, bourbon, and vanilla. Chill 4-24 hours.
  • At serving time, in a bowl whip cream and 2 tablespoons sugar till soft peaks from. transfer chilled egg mixture to a punch bowl. Fold in whipped cream mixture. Serve at once. Sprinkle each serving with nutmeg.

Ingredients

  • 2/3 C. shortening
  • 3/4 C. sugar
  • 1 egg
  • 1/2 C. undiluted frozen orange juice concentrate thawed
  • 2 tbsp. grated orange rind
  • 2 C. flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

Instructions

  • Heat oven to 400F.
  • Mix shortening, sugar and egg thoroughly.
  • Stir in orange juice and rind.
  • Stir dry ingredients together and blend in.
  • Drop rounded teaspoons of dough about 2 inches apart on an ungreased baking sheet.
  • Bake for 8-10 minutes or until edges begin to brown.
  • Frost with icing.
  • to make the orange butter icing, combine 2 1/2 tbsp. softened butter, 1 1/2 C. powdered sugar and 2 tbsp. orange juice.

 

Black Forest Flan

Ingredients

  • 1 bx. devil's food cake mix
  • 1/2 C. vegetable oil
  • 1 1/4 C. water
  • 1 tsp. vanilla butter and nut flavoring
  • 4 extra large eggs
  • 3 oz. box instant chocolate pudding mix
  • 8 oz. pkg. cream cheese softened
  • 1 1/2 C. confectioners sugar
  • 1 tsp. vanilla
  • 2 cans cherry pie filling

Instructions

  • Preheat oven to 350F.
  • Grease the bottom of two flan pans.
  • In a large mixing bowl, blend the cake mix, oil, water, flavoring, eggs and pudding mix.
  • Beat on medium speed for 2 minutes.
  • Divide batter evenly between the 2 pans.
  • Bake for 25-30 minutes or until cakes spring back when touched lightly.
  • Let rest on cooling racks for 15 minutes and then invert and lift off the pans.
  • Cool thoroughly and place on a serving plate.
  • Whip cream cheese, sugar and vanilla until smooth.
  • Spread half of the topping over each of the cakes and top one can of pie filling on each.
  • Each flan serves 6-8 people.

 

Ginger Creams

Ingredients

  • 1/3 C. shortening
  • 1/2 C. sugar
  • 1 egg
  • 1/2 C. molasses
  • 1/2 C. water
  • 2 C. all purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cloves
  • 1/2 tsp. cinnamon
  • Lemon Icing

Instructions

  • Mix shortening, sugar, egg, molasses and water and mix thoroughly.
  • Stir dry ingredients together and blend in.
  • Chill dough.
  • Heat oven to 400F
  • Drop dough by teaspoon about 2 inches apart onto a lightly greased baking sheet.
  • Bake for approximately 8 minutes or until almost no imprint is left when lightly touched.
  • While slightly warm, frost with lemon icing.
  • To prepare the lemon icing, mix together 2 1/2 tbsp. softened butter, 1 1/2 C. powdered sugar and 2 tbsp. lemon juice.

 

Eggnog Cheesecake

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup margarine melted
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 8 ounces cream cheese softened
  • 1/4 cup sugar
  • 1 cup eggnog
  • 1 cup whipping cream whipped

Instructions

  • Combine crumbs, sugar, nutmeg and margarine;press onto bottom of 9-inch spring form pan.
  • Soften gelatin in water; stir over low heat until dissolved.
  • Combine cream cheese and sugar at medium speed on electric mixer until well blended.
  • Gradually add gelatin and eggnog, mixing until blended.
  • Chill until slightly thickened; fold in whipped cream.
  • Pour over crust; chill until firm.
  • VARIATION: Increase sugar to 1/3 c.
  • Substitute milk for eggnog.
  • Add 1 t vanilla and 3/4 t rum extract.
  • Continue as directed.

Ingredients

  • 4 oz. sugar
  • 5 egg yolks
  • 1/2 tsp. vanilla
  • 5 egg whites
  • 1/2 tsp. cream of tartar
  • 3 oz. superfine or powdered sugar
  • 1/2 C. flour

Instructions

  • Preheat oven to 375F.
  • Cream the sugar and egg yolks together.
  • Add the vanilla and beat until light and creamy.
  • Beat the egg whites, gradually adding the sugar until stiff.
  • Fold into egg yolk mixture alternating egg whites and flour.
  • Put mixture into a pastry bag fitted with a medium plain tube.
  • Pipe mixture onto a greased and floured baking sheet forming 3 inch fingers.
  • Bake 8-10 minutes and cool on rack.

 

Basic Eggnog

Ingredients

  • 12 egg yolks
  • 1 lb. confectioner’s sugar
  • 2 c. dark rum brandy, bourbon, or rye
  • 2 to 4 cups of liquor
  • 2 quarts whipping cream
  • 1 cup peach brandy if desired
  • 8 to 12 egg whites

Instructions

  • Step One Preparation
  • Beat separately until light in color. 12 egg yolks Beat in gradually. 1 lb. confectioner’s sugar Add very slowly, beating constantly. 2 c. dark rum, brandy, bourbon, or rye. Let mixture stand covered for 1 hour to dispel the “eggy” taste.
  • Step Two Preparation
  • Add, beating constantly, 2 to 4 cups of liquor 2 quarts whipping cream 1 cup peach brandy, if desired Refrigerate covered for 3 hours. Beat until stiff but not dry 8 to 12 egg whites Fold egg whites lightly into the other ingredients. Serve sprinkled with fresh nutmeg and cinnamon to taste.

Ingredients

  • 2 1/2 C. all purpose flour.
  • 2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 C. canola oil
  • 2 C. sugar
  • 4 large eggs
  • 2 C. mashed bananas ripe works best
  • 1 tsp. vanilla
  • 1 1/3 C. semisweet chocolate chips
  • 3/4 C. toasted walnuts optional

Instructions

  • Preheat oven to 350F
  • Line two 9X5 metal loaf pans with greased parchment paper.
  • In a bowl, combine flour, baking soda and salt.
  • In a large bowl, using an electric mixer, beat oil and sugar. Add eggs to mixture one at a time, beating well after each addition.
  • Add bananas and vanilla and beat well.
  • Combine both the wet and dry mixtures and combine until smooth.
  • Stir in chocolate chips and walnuts if using them.
  • Spread batter evenly in prepared pans.
  • Bake in a preheated oven for 60 to 65 minutes.
  • Let cakes cool for 15 minutes before removing from the pans.
