Rice Pancakes

- 1 1/4 c. rice
- 2 1/2 c. water
- 4 c. milk
- 3 eggs beaten
- 1/2 tsp. salt
- 1 1/4 c. flour
- 1 to 2 tsp. butter melted
Boil rice in a covered pot until slightly overdone and add milk. Remove from heat and allow to cool. When rice has cooled, mix in eggs, flour, salt and butter. Mix together with rice mixture.
