Eggless Coffee Crisps

Ingredients
  • 2-1/2 cups of flour
  • 2 teaspoons cinnamon
  • ¼ teaspoon salt
  • 1 cup softened butter
  • ½ cup packed light brown sugar
  • 2 teaspoons instant coffee granules dissolved in 2 teaspoons hot water
Instructions
  1. Mix flour, cinnamon & salt in a separate bowl, beat butter and brown sugar until light and fluffy.
  2. Beat in the dissolved coffee.
  3. With the mixer on low speed gradually mix in flour mixture until blended.
  4. On wax paper shape dough into 2 blocks about 8" long by 1-1/2 inches square.
  5. Wrap and chill for at least 4 hours until firm enough to slice.
  6. Heat oven to 350 degrees.
  7. Slice dough into ½" slices and place on ungreased cookie sheets 1 inch apart.
  8. Bake 12 to 14 minutes until light golden brown and firm.
  9. Remove to racks to cool.
  10. Glaze
  11. teaspoons instant Coffee granules dissolved into 4 teaspoons hot water
  12. cup confectionery sugar
  13. Mix until smooth and drizzle over cookies.
Notes
If you can get chocolate covered coffee beans, place one in the center of each cookie, using a drop of glaze as glue.
*Chocolate coffee beans can be expensive and after much searching last year the beans that I did find (at the mall) looked a little old to me. So as an alternative I used those new premium M&M's in mocha flavor. They worked out nicely.
