Macaroon Cookies

- 4 lg. egg whites
- 1½ tsp. vanilla
- ⅔ c. sugar
- ¼ c. all purpose flour
- 3½ c. lightly packed sweetened coconut
- Beat egg whites with a mixer until frothy and add vanilla, sugar and flour until smooth. Stir in coconut until evenly moistened. Using a small ice cream scoop (about ΒΌ C.) place balls of dough on a lightly greased cookie sheet and bake at 325 degrees for 25 minutes.
